Turkey Cranberry Melt

Ingredients:

1 slice Bread of choice

3 oz SMOKIN MF Turkey

2 tbsp (30g) Cranberry Sauce

1 tsp LIGHT Mayo

1 tsp Dijon Mustard

handful of arugula


Directions: 

Combine the mayo and dijon mustard and spread on top of the bread slice.

Top with arugula, followed by the turkey, cranberry sauce and cheese.

Toast or broil to melt if desired.

Thanksgiving Crunchwrap

Ingredients:

1 piece Joseph Lavash (or other large wrap)

2.5 oz SMOKIN MF Turkey, chopped 

1.5 tbsp (22g) Cranberry Sauce

1.5 tbsp (22g) Mashed Potatoes

2 tbsp chopped cooked green beans

3/4 oz (22g) Brie or shredded white cheddar cheese

optional herbs


Directions: 

Place the mashed potatoes in the center of the lavash wrap.

Top with the gre beans, followed by the turkey, cheese and cranberry sauce.

Fold the lavash into a crunch wrap, folding inwards, around the center, creating pleats. Turn your wrap over to prevent the wrap from opening up.

Warm a medium sized skillet on medium high heat, and lightly spray with nonstick cooking spray.

Place the wrap opening side down and cook for 3-4 minutes per side, or until the crunchwrap is lightly golden brown.

Allow the wrap to cool for a few minutes before slicing in half to serve.

BBQ Turkey Quesadilla

Ingredients:

2.5 oz SMOKIN MF Turkey, chopped 

sprinkle of southwest seasoning

2 tbsp (30g) Ray's NO SUGAR Added BBQ Sauce

2 small corn tortillas

35g reduced fat Mexican style shredded cheese


Directions: 

In a small bowl, add the turkey, seasonings and BBQ Sauce. Toss to evenly coat.

Warm a medium sized skillet to medium high heat, and lightly spray with nonstick cooking spray.

Place one of the tortillas down in the pan, and top with the turkey and cheese. 

Top with the second tortilla.

Cook for 2-3 minutes, carefully flip, and cook for another 1.5- 2 minutes.

Remove from the pan, slice and serve with sour cream and salsa.

Goat Cheese Poppers

Ingredients:

1 large red bell pepper

6 pieces Turkey Bacon

60g Goat Cheese

Sea salt and pepper to taste


Directions: 

Preheat your grill to medium-high heat. 

Slice and deseed the pepper, cutting the pepper in to 6 larger slices, creating a boat for your filling. 

Stuff each pepper with equal partyts (10g) of the goat cheese. 

Wrap each stuffed pepper in 1 slice of the Turkey Bacon. 

Spray your grill with nonstick cooking spray and place the peppers, bottom side down on the grill. Grill for about 5 minutes until just slightly charred, or more depending on preference. Do not flip. 

Cool before serving.

Black & Blue Salad

Ingredients:

80g mixed greens or spring mix

40g tomato (about 4 grape tomatoes)

40g cucumber, sliced

30g blueberries

15g blue cheese

3 oz SMOKIN MF Brisket

3 ml (2 tbsp) Fat Free Italian Dressing


Directions: 

In a serving bowl, add the greens first, followed by the remaining ingredients. ENJOY!

Ingredients:

85g mixed greens or lettuce of choice

4 sliced grape tomatoes

1.5 tsp (10g) green onion, chopped

3 tbsp (40g) cooked pasta (macaroni shape)

1 slice Turkey Bacon, cooked& chopped

30g (1/4 of small avocado) avocado

1 tbsp (15g) blue cheese

3 oz SMOKIN MF Smoked Turkey

2 tbsp (30g) Bolthouse Farms Honey Dijon Dressing


Directions: 

In a serving bowl, add the greens first, followed by the remaining ingredients. ENJOY!

Smoked Shrimp Taco Salad

Ingredients:

100g Butter lettuce or spring mix

30g tomatoes, cubed

85g SMOKIN MF Smoked Shrimp

Half oz (1/2 single serve bag) Quest Protein Tortilla Chips

50g Guacamole

30g Light Sour Cream
30g Bolthouse Farms Ranch Dressing

1 tsp Taco Sauce


Directions: 

In a large salad bowl, layer the lettuce and tomatoes. Combine the ranch dressing and taco sauce and drizzle over the top. Top with the cooked shrimp, chips, guacamole and sour cream.

Smoked Chicken Salad Lettuce Wraps

Ingredients:

3 oz SMOKIN MF Smoked Chicken, chopped

40g grapes, sliced in half

40g apple, sliced

10g craisins

½ tsp celery salt

40g cucumber, chopped and chopped (or celery)

50g Tzatziki Dip (low fat variety brands Cedar's, Boar's Head, Trader Joe's)_

Ground pepper to taste

1 tsp Dijon Mustard

Juice of half of one lemon

Nuts (optional)


Directions:  In a medium sized mixing bowl, combine the tzatziki, craisins, celery salt, pepper, mustard and lemon juice. Add the chopped chicken and toss coat. Last, add in the grapes, cucumber (or celery) and apple and gently toss to combine. Cover with plastic wrap and store in chilled. Serve on romaine leaves.

Cowbody Brisket Sandwich

Ingredients:

  • 8 slices thick sliced bread
  • 16 oz SMOKIN MF Smoked Brisket, sliced
  • 4 slices reduced fat pepper Jack cheese
  • Pickled jalapeño pepper slices (optional)
  • 4 tbsp No Sugar Added BBQ Sauce
  • 2 tbsp Light Mayo


Directions:  Preheat oven to 400 degrees. Line a cookie sheet with aluminum foil. 

Lightly spray with  nonstick cooking spray. Place the bread on the cookie sheet.

Top 4 of the slices with the cheese.  Place the cookie sheet in the oven and bake for 5 to 6 minutes, or until the bread is toasted and the cheese is melted. 

Meanwhile, create your spread by combining the light mayo and no sugar added bbq sauce.

Top the toasted bread slices with melted cheese with equal parts of the brisket (about 4 oz per sandwich) and jalapeño pepper slices. Spread the top the plain of the toasted bread with equal parts of the spread. and place on top of each open face brisket sandwich.

Smokin Nachos

Ingredients:

  • 28g (1 oz)Tortilla Chips
  • 60g, divided (4 tbsp) No Sugar Added Barbeque Sauce
  • 2 oz SMOKIN MF Smoked pullled pork
  • 28g (1 oz) reduced fat Shredded Cheddar Cheese or Mexican Style Cheese
  • 14g Part Skim Mozzarella Cheese
  • 30g Light Sour Cream
  • sprinkle of southwest seasoning
  • pinch green onion, chopped


Directions:  Spray one microwave safe plate with nonstick spray. Layer the Tortilla Chips with half of the BBQ sauce, pork, remaining BBQ sauce, both types of cheese, and seasoning. 

Melt in the microwave until the cheese is melted, about one minute. Top with the green onion. 

Serve with gaucamole, light Sour cream, salsa, shredded lettuce, and jalapenos.

TIP: HOW TO REHEAT YOUR SMOKED LEFTOVERS

  • Store Leftovers in the Refrigerator (not the Freezer) in a Covered Container.
  • Remove Item and Slice in Regular Serving Portions (Do Not Leave in a Large Chunk). Normal Pencil Width or a Tad Less Wide will be ideal.
  • Place Sliced Items in Wax Paper and make a nice fairly tight Bundle of the Sliced Items.  Do not use any other type of wrapping.
  • Place Bundles in Microwave at High for 30 to 40 Seconds. Be careful  as the Steam in the Bundles will be very hot when removing from Microwave
  • Unwrap and Serve with or without Sandwich
  • The Items will be Moist and Ready to Eat.
